Ingredients
- 4 oz mild cheddar cheese
- 2 oz Colby Jack cheese
- 2 oz extra sharp cheddar cheese
- 2 T. mayonnaise
- 1 jar diced pimientos
- 1 teaspoon black pepper (to taste)
Preparation
Using a food processor, shred cheese and place in mixing bowl. Add pimientos; mix thoroughly,
Add mayonnaise - start with one tablespoon, mix thoroughly and add as much remaining mayonnaise as needed to make a creamy mixture. Add black pepper to taste. Salt should not be needed.
Makes 4-6 sandwiches
Instructions
The best way to determine if the pimiento cheese is exactly the way you want it is to spread one teaspoon on a half a slice of bread, just enough for one bite. This way, you get the best ratio of pimiento cheese spread to bread and can make adjustments as needed

- Serve at a picnic at the beach or on a fishing trip alongside Mission tortilla strips and E.L. Fudge cookies.
- Also makes a great dinner when used for toasted cheese sandwiches - especially on the last night of a family beach trip when everyone is sunburned and no one feels like cooking or going out.
