Ingredients
- 2 14.5 oz. cans creamed corn
- 2 7 oz. cans green chili peppers
- ½ C vegetable cooking oil
- ½ C yellow corn meal
- 2 eggs
Preparation
Pre heat oven to 400 degrees F
Spray baking dish with vegetable cooking spray
Instructions
Mix canned cream corn and green chilies in a large mixing bowl. Combine 2 eggs, cooking oil and yellow corn meal and blend with corn and chilies until all ingredients have been thoroughly mixed. Add to baking dish, place on center rack of oven and bake for 1 hour or until mixture is set and top is golden.
Serving Suggestions
Let casserole cool and set up for 15 minutes before serving
