Mandarin Orange Jello Salad

This fluffy, sweet and tangy salad has been a favorite addition to any holiday meal  for generations.  Variations include using raspberry Jello and fresh raspberries, replacing cottage cheese with cream cheese, or mixing in the Jello in its powder form.

Ingredients

  • 1 16 oz carton of small curd cottage cheese
  • 1 small box of orange Jello
  • 1 small can of mandarin oranges
  • 1 small can of crushed pineapple
  • 1 8 oz container of whipped topping

Preparation

  • Prepare Jello according to directions on box; cool until jelled
  • Thoroughly drain mandarin oranges and crushed pineapple
  • Thaw whipped topping

Instructions

Mix together ingredients in order listed, being careful to fold in the whipped topping.  Cover and refrigerate at least two hours before serving.

Serving Suggestions

Serve as a side dish with the main meal, or as a light dessert with one or two vanilla sandwich cookies.
